Spinach Stuffed Squash….a nice alternative to a twice baked potato
Easier than pie Strawberry Short Cake…..
Bake a yellow cake mix just like it says on the box
Then make this amazing icing:
1/2 pound cream cheese, room temperature
2 sticks (1/2 pound) unsalted butter
2 pounds powdered sugar, sifted
1 teaspoon vanilla
Just mix all of this stuff together with a mixer and put the icing in the fridge while the cake is baking/cooling.
Cut up a bunch of strawberries and cover them in sugar or a sugar substitute
When the cake is done baking and has had time to cool poke a bunch of holes in it with a fork.
Put half of the strawberry mix on top of the bare cake making sure you drizzle all of the delicious juice all over the cake
Add the icing and the rest of the strawberry mix and spread all around.
Put the cake in the fridge or serve immediately.
It’s not very pretty but it’s so good Teddy had a piece with every meal!
And this delicious stuff my friends is from Mediterranean Deli….so you could just go there and get delicious food too!
